Hoi, readers!

Yo hoy he usado oolong blanco.

Greetings from the heart of Europe!

Today I thought about changing the subject a little bit and prepare for the upcoming winter season together :)

Here in Maastricht winter is almost upon us and, with it, the desire to spend whole afternoons in the couch watching Community while sipping some delicious hot beverage.

So, in the spirit of the season, I decided to share with you guys one of my favorite warm beverages: an apple-ginger infusion.

The only thing we need are some apples (whichever type you like the most), a nice piece of fresh ginger and a cinnamon stick.

Measurements are not my thing but I can give you some kind of estimates. To make 2 generous servings, I used two apples (very sweet apples from North Holland) and a nice piece of ginger (like a golf ball?)

To get started, we first need to peel and cut/slice those awesome ingredients. Go for small pieces so they give out the flavor more easily, just don't go crazy chef on them.

Next, we need to put the apples, the ginger and the cinnamon stick in a pot with 1 litter of water and crack the high up! Once it starts boiling, reduce the heat to medium to maintain a gentle simmer and let it cook for about 20-30min.

If this is your first time cooking ginger, be aware that it might leave some spicy notes in the drink so, if you don't really like spicy or are too afraid to try "spicy" drinks, you can put the ginger later on, maybe the last 10min of cooking.

And now the only thing left is to serve and enjoy!

We can leave those boiled pieces of heaven in, or strain it all; its up to you.

The best part about this drink is that, if the amazing winter cold has not reach your city yet (yes, I'm one of those guys that loves winter over summer), you can refrigerate this drink and enjoy freezing cold over some ice!

I know its much easier to just buy some lipton tea bags or a cold coke, but the great thing about this is that, not only you do know whats in it, but you can actually adapt it to your preferences! Plus, the sugars it has come from natural sources and are just sugar, instead of those unpronounceable petrochemical derivatives that we like to drink with our sodas.

*Pro tip: if you wish to upgrade the drink to an even more winter-y one, you can just add some loose tea the last 2-3 mins before serving. I like to add some white oolong leaves to mine.

Hope you give this a try. Enjoy!

See you next time,

-Andrés
